For a quick fix meal I love doing stir-fry’s with a side of plain steamed rice. It’s simple to make and is always comforting to eat.
Here’s an easy shrimp recipe that’s tangy, spicy (if you use cayenne, but you can also use paprika) and juicy! It’s super delicious and I promise you’ll love it if you try it (if you like shrimp mushrooms and spinach that is 😉 ).

As I waddle over to the couch, over stuffed and heat still on my lips…I have to say this was wonderful. I served it over pasta, cuz hubby doesn’t care for rice. Didn’t have a bell pepper, I added a red onion chopped large. Now I have to figure out the calories. So good. Will make again with bell peppers.
