A popular recipe found at most festive celebrations in former USSR nations is what us outsiders call Russian Salad. However, in Russia and other former USSR countries it’s popularly known as Salad Olivier. Traditionally, the recipe includes, hard boiled eggs and bologna (or some kind of meat), however I like to leave them to keep it lighter. I love this salad for a number of reasons…one, you can make it a day ahead of time and pop into the fridge (it actually tastes better as it develops more flavor this way), secondly, it’s like 2 dishes in one, a vegetable side dish and a cold salad, it’s Gluten-free (if you use Best Foods mayo) and lastly, it’s simply delicious!
Russian (Olivier) Salad Recipe
3 Potatoes (boiled & diced)
A handful (around a pound)of green beans (diced and boiled)
1 Green Apple (diced)
1 (15oz) Can of Corn
1 (15oz) can of peas and diced carrots
1 can of diced pineapples
5-6 green onions/ scallions (sliced)
Handful of fresh dill
For the Dressing-
1 cup of Mayonnaise
2 tbsp sugar
1 tsp Salt
1 tsp Pepper
- Toss all the boiled and diced veggies and fruits in a large bowl.
- In a separate bowl, mix all the dressing ingredients (mayonnaise, sugar, salt and pepper). Sprinkle half the chopped dill in the salad and mix. Pour the dressing over and stir to coat all the ingredients well.
- Garnish with the rest of the finely chopped fresh dill.
